This Asajiwo Muroka Tokubetsu Junmai Namagenshu from Hirai Shoten uses Shiga Watari Bune No. 6, a rare heirloom rice variety revived in Shiga Prefecture and valued for the rich, full-bodied sake character it imparts during fermentation. Bottled muroka (unfiltered) and as namagenshu (raw and undiluted), every aspect of the production preserves maximum flavor intensity and the natural haze of unrefined sake. Shiga Watari Bune No. 6's historical lineage, as an ancestor of Omachi rice, contributes a distinctive earthy complexity and bold umami backbone.
