Fujii Honke's Kyokujitsu (Rising Sun) Tankan Wataribune Namaoto Junmai Namagenshu uses Tankan Wataribune, a historic Shiga rice variety that is the genetic ancestor of Yamada Nishiki, polished to 80% for a full, robust pure rice character. Brewed via the kimoto method at this 1831-founded brewery in Aisho-cho, Shiga, which has provided ritual sake to the Imperial Court since 1945, the sake develops its distinctive acidity through natural lactic bacteria without added lactic acid.
