Description

Ginginga (silver galaxy) is Akabu Shuzo's junmai ginjo showcase of the Iwate-grown Gin-Otome rice variety, a local strain bred for its delicate aromatic expression. Rebuilt in Morioka after the 2011 tsunami, Akabu under Kosuke Kudo crafts this sake with a clean, modern sensibility: crisp acidity, pale melon aromatics, and a precise, dry finish.
