Wakamizu rice, an Aichi Prefecture sake rice cultivar, is milled to 65% for this junmai from Kamisugi Shuzo in Anjo. The brewery, which operates its own on-site rice mill to handle the notoriously difficult-to-polish Wakamizu variety, produces this as a food-friendly everyday junmai drawing on soft well water from within the brewery grounds.
