Aimusume is the signature label of Aimusume Shuzo, a small brewery on Nagasaki Prefecture's Shimabara Peninsula, a region shaped by the volcanic geology of Mount Unzen and the mineral-rich waters that filter through its lava fields. Nagasaki's mild maritime climate and distinct terroir give this sake a regional character uncommon in Japan's more celebrated brewing prefectures.
