Established in 1873 in Aino Town near the Unzen volcanic region of Nagasaki Prefecture, Aimusume Shuzo has remained in the Yamazaki family for generations, using pure underground water from the Unzen area to craft its sake. The brewery's distinctive brick chimney stands as a visible reminder of the Meiji-era heritage, and all sake is produced using traditional methods passed down through the family. Signature expressions include the Kagayaki Junmai and the Junmai Daiginjo Ai.
