Abekan Shuzo's Jummaiginjo Hiyori uses this Hiyori rice polished to 55%, contributing a clean, slightly floral character with the mild sweetness and gentle grain depth that Miyagi cultivars reliably deliver alongside the region's characteristically soft water. The brewery's 1716 founding places its origins in the early Edo period, predating many of Japan's most recognized sake houses, and the Hiyori expression continues the lineage: restrained, purposeful, and shaped by a specific regional palate refined over generations of brewing.
