Chapter Six of the 59 Takachiyo series uses first-grade Miyamanishiki from Nagano Prefecture, polished to 59% using the flat technique and bottled as unadjusted nama genshu. With a sake meter value of +2.0 and acidity of 1.6, it shows crisp, bright ginjo fruitiness with a clean, smartly dry finish.
