Yamasammasamune Tokusen Izumi is a honjozo from Sakemochida Honten in Shimane, using Gohyakumangoku and other rices polished to 70%. The tokusen (superior selection) designation marks it as the benchmark expression of the Izumo spring water that defines the brewery's sake character.
