X Rose Kojisambaishikomi Junmaishu Akamai is an unconventional junmaishu from Kinmon Akita Sake Brewery brewed using three times the normal quantity of koji rice alongside red rice. The triple-koji technique dramatically amplifies sweetness and umami, while the red rice contributes a distinctive rosy hue and earthy, nutty character. This experimental brewing method produces a deeply layered, richly textured sake unlike conventional expressions.
