
Tamaasahi Shuzo, Toyama Prefecture's oldest operating brewery since 1808, draws soft water from the Joganji River underground aquifer and cultivates its yeasts from alpine flowers and tulip pollen collected in the surrounding mountains. One hundred percent Toyama-grown rice, polished to 65%, is brewed by hand in small batches with no concession to scale. The Usunigori White leaves fine rice lees in suspension for a light, creamy cloudiness. On the nose: melon, soursop, and coconut water. On the palate: creamy, gentle lychee depth with a roasted nori finish that recalls the mountain origin of every ingredient in the glass.
