Yamada Nishiki harvested in the hilly terrain of Fukui's Togo district gives this autumn-aged junmai a warm, golden character that fills out over summer. The brewery's description calls it a full-bodied, gently dry sake best enjoyed as the mountains turn amber, with a core of rice umami softened by months of quiet maturation.
