Junkara, meaning rich (jun) and dry (kara), defines this house-style junmai ginjo from Tsuruoka, built on Dewa Sansan for depth of rice umami balanced against a clean, dry finish. Aroma is intentionally restrained so the sake complements a wide range of dishes at temperatures from chilled to warm.
