오키 사케 브루어리는 1972년 기쿠스이, 다카마사무네, 오키즈루, 황거 등 다섯 양조장(사이고 주조 협동조합)이 합병하여 설립되었습니다. 오키 제도는 시마네 반도에서 일본해 쪽으로 약 40~60km 떨어진 곳에 위치하며, 고토바 천황과 고다이고 천황이 유배된 역사적인 섬으로도 알려져 있습니다. 쓰시마 난류의 영향으로 풍부한 강수량과 안개가 형성되어 섬 곳곳에서 양질의 용수가 솟아나며, 환경청이 선정한 '명수 100선'에 이름을 올린 샘물도 두 곳이나 있습니다.
