Shakunagenota Ginjo uses Gohyakumangoku polished to 58%, produced by Oki Shuzou on Oki Island in the San'in region of Shimane. Named after the rhododendron flower native to Oki, it reflects the brewery's commitment to local ingredient identity alongside carefully managed ginjo fermentation.
