Nitamai is a sake brand built around Nita-grown rice from Okuizumo in Shimane Prefecture, crafted entirely as junmai at a brewery that uses only locally sourced ingredients and spring water from Mt. Gyokuho. The brewery applies its own milling and Young Izumo Toji brewing expertise to transform this prized food rice into a clean, crisp pour.
