Koten Junmai Ginjo Nama is an unpasteurized pure rice ginjo from Kouten Shuzo in Nagano Prefecture. Nama sake skips pasteurization to retain fresh, lively aromas and a vibrant texture on the palate. Nagano's alpine water and cold climate make it well suited for producing this style of delicate, aromatic junmai ginjo.
