Daiginjo made from Yamada Nishiki polished to 38%, named after Sakatamaiko, a product of Eau de Vie Shonai's handcrafted, small-batch production in Sakata, Yamagata. Fruity aroma and a mellow, sophisticated palate are the defining features of this highly polished expression.
