Kitanokatsu Hoo (鳳凰) is a josenshu-grade sake from Usui Katsusaburo Shouten in Nemuro, Hokkaido, offering more body and backbone than the entry-level Daikai. With a polishing ratio of 70% and a slightly positive nihonshu-do, it carries a dry, composed character suited to everyday drinking and pairs naturally with Nemuro's seafood.
