Honjozo from Hokkaido's only sake brewery operating at Japan's easternmost point, in Nemuro, where it was founded in 1887 by Niigata-born Katsusaburo Usui. The cold sub-arctic climate of the Pacific coast provides natural conditions for low-temperature fermentation, producing a sake with fragrant, full-bodied warmth suited to hot serving.
