Kajokotobuki Daiginjo Omachi uses Omachi, one of Japan's oldest and most revered sake rice varieties, in a daiginjo context at Kotobuki Toraya Shuzo. Omachi is known for producing sake with a distinctive earthy depth and complexity, a contrast to the lighter profiles typical of modern sake rice.
