Bottled as namagenshu, it is both unpasteurized and undiluted, preserving the full intensity of the fresh ginjo aromatics and natural alcohol strength. The combination of Yamada Nishiki and Akita soft water produces a bold, fragrant raw sake with a clean, direct character.
