Shikihanamori Mild is produced by Akitaken Hakkou Kogyo, a brewery established in 1945 in Yuzawa, Akita, a city accounting for roughly 70% of the prefecture's sake output and known for its high-quality soft snowmelt water and rice cultivation. The brewery operates two facilities: a traditional hand-crafted 'Showa Kura' for premium expressions and a modern 'Heisei Kura' for wider production. This mild-style sake draws on Akita's cold climate and pure water to deliver a smooth, restrained character.
