Kagamatoi Junmai Karakuchi takes its name from the kaga-matoi, the decorative fire standard of Edo-era Kaga firefighters. Brewed by Fukumitsuya in Kanazawa, it expresses the proud civic identity of Ishikawa through a dry, clean junmai character built on soft Hakusan Mountain water.
