Junmaigenshu Jun is a full-strength, undiluted junmai bottled at genshu concentration, brewed from Yamada Nishiki milled to 50% at Yamada Shuzo in Kanie-cho, Aichi. The yamahai fermentation method employed by the brewery builds a rich, robust base umami, which in genshu form delivers heightened intensity and a firm, persistent finish.
