준마이 다이긴죠 고케고로시

🍶
Description

From Uehara Shuzo in Shiga, this junmai daiginjo is pressed with the rare kioke tenbin wooden-vat balance method using house-cultivated wild yeast in a natural yamahai-style fermentation. Its name translates loosely to Five Households, Five Killings, suggesting the intensity of character that the brewery's fully natural brewing approach produces at the premium polishing level.
