Koshi Tanrei rice milled to 50% is the signature ingredient of this tokubetsu junmai from Yahiko Village, Niigata. Koshi Tanrei was developed by Niigata Prefecture through crossing Yamada Nishiki and Gohyakumangoku, designed for daiginjo-class brewing, and here it yields a refined, clean sake with the hallmark Niigata elegance and restrained umami.
