Aikoku is an ancient heirloom rice variety revived in Yahiko Village through the Yahiko Aikoku Project, grown with reduced pesticide and no chemical fertilizers on a single tan of land from seed stock preserved at Niigata's crop research center. Brewed at 55% polish with Yahiko-zakura flower-derived yeast cultivated by Tokyo University of Agriculture, this junmai ginjo delivers a full, aromatic sake with characteristic acidity and dry finish.
