Inatahime Junmaishu Gouriki from Inata Honke Shuzo is specifically brewed using Goriki rice, a traditional Tottori Prefecture sake rice variety that was nearly extinct before being revived by local breweries and farmers in the 1990s. Goriki (meaning strong power) is known for producing sake with robust body, good acidity, and a distinctive earthiness. This junmai expresses the full character of the revived heritage rice in a pure, alcohol-free fermentation.
