Honjozonamachozoshu Kameno is a honjozo sake from Iwate Meijyo that undergoes nama-chozoshu processing, meaning it is stored unpasteurized and pasteurized only once at bottling rather than twice. This single-pasteurization method preserves more of the sake's fresh character while extending shelf life compared to fully raw nama sake. Brewed in Iwate Prefecture, this expression from the Kameno label has a bright, slightly lively quality from the reduced heat treatment.
