Description

Junmai Daiginjo Yumefubuki is produced at Iwate Meijyo using Yumefubuki, an Iwate-developed sake rice whose name means 'dream blizzard,' polished to daiginjo standards without the addition of distilled alcohol. The junmai daiginjo classification requires both a 50% or finer polishing ratio and the absence of added brewing alcohol, making this one of the brewery's most labor-intensive expressions. Iwate's cold fermentation environment allows this sake to develop the fragrant, layered profile associated with top-tier pure rice brewing.
