Hanazakari Junmai Ginjo Hiyaoroshi is an autumn-release, once-pasteurized sake from Hanamori Shuzo in Yaotsu, Gifu, brewed in winter, matured through summer, and released when temperatures cool in the fall. The hiyaoroshi style allows the sake to develop roundness and integration during months of cellar aging, softening the edges of the junmai ginjo's aromatic character. The brewery's bag-hanging drip extraction and rare manually operated press ensure the clarity and smoothness that define this autumn release.
