Haginotsuyu Junmai Ginjo Funabajikagumi Nakagumi Muroka Nama from Fukui Yahei Shoten in Takashima, Shiga, is a fune-pressed (traditional wooden box press), unfiltered, unpasteurized expression using Yamadaho rice at 55% polish. From a brewery founded in the Kan'en era (1748 to 1751), situated where Lake Biwa meets Mt. Hira's soft mountain water, the muroka nama character preserves the full, vibrant freshness of this labor-intensive pressing method.
