Founded in 1892, 5th-generation Takeshima created the Monsoon series using his proprietary re-brewing method (Sai-shikomu nojuku seizo-ho) inspired by German Trockenbeerenauslese, producing ultra-concentrated, complex sake that defies conventional category boundaries.
