Description

Denemon Junmai Ginjo Mangetsu (満月), meaning full moon, uses Koshi Ibuki (こしいぶき) polished to 60% from Echigodenemon in Kita-ku, Niigata City. Solo brewer Kato Hiroki, who revived this brewery in 2021, uses kimoto-style yeast starters and Koshi Ibuki , a Niigata rice more often used for table rice , to pursue a fuller, more textured style than conventional Niigata sake.
