
Low High Who is a concept-driven experimental sake from Echigo Denemon in Niigata City, where the name encodes the brewing approach: Low (low alcohol, low amino acids, extended cold fermentation), High (high-temperature yamahai starter), and Who (the head brewer himself). Polished to 50% and made using the high-temperature yamahai method, it achieves a cool, clean palate with fullness that does not fatigue the drinker.
