Denemon Daiginjo Echigo no Yukari Namacho Binhiire uses Yamada Nishiki polished to 40% in a once-pasteurized, bottle-pasteurized Daiginjo from Echigodenemon in Kita-ku, Niigata City. This brewery, revived in 2021 under solo brewer Kato Hiroki who lives on-site, deliberately breaks from Niigata's trademark clean-dry style to pursue layered texture and acidity.
