Daisekkei (大雪渓), meaning great snow valley, takes its name from the famous snowfield on Mount Shirouma in the Northern Alps near Azumino, Nagano. Founded in 1898, this brewery uses Miyama Nishiki polished to 49% and subterranean Alpine spring water for this Daiginjo, pioneering the use of Nagano-grown Omachi and winning IWC recognition for its mountain terroir expressions.
