Daiginjo Hanzo Shizukuzake is a drip-pressed daiginjo using Yamada Nishiki polished to 40%, hand-crafted at Ota Shuzo in Iga, Mie. Moromi is placed in cloth bags and the sake that drips naturally is collected, a method that yields a delicate, refined texture. The Reiwa 6 brewing year release of this style won a gold prize at the National New Sake Competition.
