Inspired by the novel set around Tottori's Eko Junanaya festival, this daiginjo uses Yamada Nishiki and the ultra-soft snowmelt water filtered through the Oku-Daisen beech forest at 800 meters elevation. The water's hardness of approximately 20 contributes a mellow, clean character to the sake.
