Chotokusen Kajokotobuki is a tokubetsu honjozo from Kotobuki Toraya Shuzo, bearing the Kajokotobuki label that references Yamagata's historic Kajo Castle. A small amount of distilled alcohol is added in the honjozo tradition, lending a clean, light body. The tokubetsu designation indicates a higher standard of rice polishing or special brewing technique beyond standard honjozo.
