Banshu Okuharima Yamahai Junmai Yamadanishiki 55 Nama uses 100% Hyogo-grown Yamada Nishiki polished to 55% with the traditional yamahai method, released unpasteurized. From Shimomura Shuzoten, surrounded 90% by forest in Himeji's mountains, this small-batch handcrafted brewery (founded 1884) has used yamahai since 1994, building the lactic depth and complexity Okuharima is known for.
