A doburoku from Shimazaki Shuzo in Nasu Karasuyama, Tochigi, brewed with locally grown Koshihikari rice and classified as daiginjo. Founded in 1849 and pioneering cave aging since 1970, the brewery stores sake in a former WWII underground facility at a constant 10°C. This unrefined style retains the full, sweet umami character the brewery is known for.
