A ten-year cave-aged daiginjo from Shimazaki Shuzo in Nasu Karasuyama, Tochigi, brewed with Yamada Nishiki polished to 40%. Held in the brewery's constant-temperature underground cave, a decade of aging rounds out the sake's texture and builds the characteristic Hizo profile of honey, gentle matured aroma, and deep rice sweetness that marks Shimazaki Shuzo as a long-term aging pioneer in Japan.
