A fifteen-year cave-aged daiginjo from Shimazaki Shuzo in Nasu Karasuyama, Tochigi, brewed with Yamada Nishiki polished to 40%. Stored in the brewery's WWII-era underground cave at around 10 degrees Celsius, extended aging over fifteen years deepens the honeyed sweetness, mellow spice, and silky texture that define the Hizo series, producing a sake with exceptional integration and complexity.
