Polished to 40%, this junmai daiginjo from a Yurihonjo, Akita brewery draws on Akita's reputation as one of Japan's premier rice-growing and sake-brewing prefectures. The brewery brews exclusively during the cold season with a small crew, maintaining strict bottle-pasteurization to lock in fresh aromas and a delicate, refined palate. The 40% polish removes over half the grain, producing an exceptionally clean and luminous sake.
