Brewed with Watari Bune, a heritage rice strain that had gone extinct for sixty years before being revived in the 1990s and is one of the parent strains of Yamada Nishiki, this junmai ginjo is polished to 55%. It opens with aromas of ripe melon and pear, leading to a smooth, clean palate with gentle umami and bright acidity. Produced in Ibaraki Prefecture.
