Tomitsuru Junmai Ginjo Namagenshu utilise du Gohyakumangoku poli à 50 %, commercialisé non pasteurisé à pleine force genshu par Aichi Shuzo à Aishō-cho, Shiga. Fondée en 1869 près du lac Biwa, cette petite brasserie primée utilise l'eau de la chaîne de montagnes Suzuka pour produire cette expression non transformée et vibrante de son ginjo de riz pur certifié GI Shiga à pleine intensité naturelle.
