Fondée en 1869 près du lac Biwa, cette petite brasserie (~1 000 litres par an) récompensée par l'or Feminalise et 3 prix nationaux consécutifs atteint un raffinement daiginjo extraordinaire grâce à l'eau de la chaîne de montagnes Suzuka et au brassage pur certifié GI Shiga.
