Un junmai ginjo utilisant du Yamada Nishiki poli à 50% de cette brasserie de Yokkaichi, qui emploie de l'eau souterraine de la montagne Suzuka et applique des techniques de lavage à la main et d'étalement de koji ultra-fin dignes d'un daiginjo, même dans sa gamme standard. Le palais révèle un arôme ginjo propre, un umami élégant et une finale composée légèrement sèche.
